Job Summary

The Meat Cutter prepares, cuts, and wraps standard cuts of beef, pork, and poultry for display and sale. This position offers a direct trajectory into supervisory and meat department management roles. You will serve as On-site, delivering the signature Methodical that sets Costco apart in the retail butchery.

Comprehensive Responsibilities

• Primal Butchery: Break down 400 pounds of beef subprimals daily into retail-ready steaks and roasts using bandsaws and boning knives.
• Sanitation Compliance: Sanitize all meat cutting equipment and stainless steel work tables every 4 hours using quaternary ammonium sanitizer according to USDA guidelines.
• Inventory Rotation: Execute the first-in, first-out inventory method on 12 distinct display cases to maintain a shrinkage rate below 1.5 percent.
• Quality Control: Inspect incoming protein shipments for proper temperature compliance at 34 degrees Fahrenheit prior to accepting inventory.
